Mom's giant rice cooker was a fixture in our kitchen, especially for parties. It was filled with peas pulao, a Bengali version of fried rice. Fragrant basmati rice, cooked with earthy saffron and turmeric and studded with peas, it brightens everything on your plate. Also makes a great meal on its own, topped with a fried egg and our Green Chutney! Serves 2.
Saffron Pulao
Basmati rice, onion, peas, ginger, garlic, ghee, salt, cilantro, saffron, turmeric, cumin seeds. CONTAINS ALLERGENS: milk (ghee).
Remove lid and cover with a damp paper towel. Microwave for 1-2 minutes until steaming hot. Add 1-2 minutes if frozen. For oven preparation, thaw in refrigerator overnight, sprinkle with a tablespoon of water, and reheat in a covered baking dish at 350 degrees for 15 minutes.
